Tomato, Basil & Burrata Pasta

No need for homemade or store-bought sauce to make our tomato, basil and buratta pasta recipe. Lemon juice and olive oil are everything you need to cook this easy and quick comforting recipe. Enjoy!

 

Ingredients:

1 pack fresh fettuccine pasta

3 cups coloured cherry tomatoes

1 cup chickpeas

1 large bunch fresh basil

1 ball burrata cheese

Juice half-lemon

½ cup olive oil

2 cloves garlic, minced

1 tbsp. Dried oregano

Salt and pepper, to taste

 

Instructions:

1. Preheat over to 400°F. Slice the cherry tomatoes in half. In a bowl, combine the tomatoes, ¼ cup olive oil, garlic, oregano, salt and pepper.

2. Place the tomato mix on a baking sheet lined with parchment paper. Bake in the oven for 10 minutes.

3. Cook the pasta according to the packaging instructions. Set aside.

4. In a large pan over medium heat, add 1 tbsp. olive oil. Add the chickpeas, cherry tomatoes and cooked pasta.

5. Add the lemon juice, the remaining olive oil, chopped basil leaves, salt and pepper. Mix well to combine all ingredients.

6. Before serving, add chunks of burrata cheese on top the hot pasta. Enjoy!
