Stuffed Peppers

The cold weather is definitely not gone yet. Our vegetarian stuffed pepper recipe will warm you up on a winter’s night. Enjoy!

 

Ingredients:

4 red or green bell peppers

1 cup brown rice

1 white onion minced

1 cup diced tomatoes

½ cup corn

½ cup vegetable or chicken broth

1 cup grated cheddar cheese

1 garlic clove, minced

1 tbsp. olive oil

1 tsp. cumin

1 tsp. paprika

Salt and pepper, to taste

 

Instructions:

1. Preheat oven to 350°F.

2. In a pan over medium heat, add olive oil, onion, garlic and corn.

3. Cook 6-8 minutes and add paprika, cumin, salt and pepper.

4. Add cooked rice, tomatoes and broth. Cook 5 more minutes.

5. Remove the top and seeds of the peppers.

6. Fill the peppers with the stuffing and topped with cheddar cheese.

7. Bake in the oven for 12 minutes.
