Strawberry & Basil Bruschetta

Here's a simple, refreshing and delicious strawberry and basil bruschetta recipe to share with good company this Summer. The strawberry’s sweet side and the fine herbs freshness bring a sunny touch to your plate. 



2 cups fresh strawberries

1 bunch fresh basil

1 bunch fresh thyme

½ cup mascarpone cheese

1 bread baguette

½ cup balsamic reduction

2 tbsp. olive oil

1 tbsp. lemon juice



  1. Cut and wash the strawberries, basil and thyme and place in a bowl. Add 1 tbsp. olive oil and lemon juice. Mix well.
  2. Slice the baguette in half and brush with olive oil. Preheat the oven to 200°C and grill 5 minutes.
  3. Remove baguettes from the oven and spread with mascarpone cheese.
  4. Add the strawberries and fine herbs mix and top with the balsamic reduction.
