Ingredients:

4 cups chopped kale

1 cup beet cubes

1 apple cut into cubes

½ cup goat cheese

¼ cup pecans

¼ cup walnuts

¼ cup sliced almonds

¼ cup dried cranberries

 

Dressing:

½ cup olive oil

1 tbsp. Dijon mustard

1 tbsp. lemon juice

1 tbsp. honey

Salt and pepper

Steps

1. In a large serving bowl, combine kale, beet and apple cubes, nuts, cranberries and goat cheese.

2. In a small bowl, combine all the ingredients for the dressing. Mix well.

3. Add dressing to the salad and mix well to combine all the ingredients. Serve immediately.
