Pumpkin Cookies

There are so many delicious recipes that you can do with pumpkins. Our chefs came up with the easiest and quickest pumpkin cookie recipe. Try them at breakfast or break time!

 

Ingredients:

1 cup pumpkin purée

1 egg

1/3 cup melted butter

2/3 cup brown sugar

2 cups oat flakes

½ cup whole wheat flour

1/3 cup raisins

1 tbsp. ground cinnamon

1 tsp. ground nutmeg

Pinch of black pepper

 

Instruction:

1. Preheat the oven to 180°C. Line a baking sheet with parchment paper.

2. In a bowl, mix the pumpkin purée, brown sugar, egg and melted butter. Add the oat flakes, flour, cinnamon, nutmeg and raisins. Mix to combine.

3. Using a spoon, make 16 dough balls and place on parchment paper.

4. Bake in the oven for 16 minutes.
