12 eggs

1/3 cup 35% heavy cream

1 cup graded Parmesan cheese

2 tbsp. fresh chopped basil

1 tbsp. nutmeg

Salt and pepper to taste

1 ½ - 2 cups ratatouille (see recipe below)



1. Mix all ingredients in the pan of your choice (you can do a family size frittata or single servings).

2. Bake in the oven at 320-degree F for 12-14 minutes.


Ingredients (ratatouille):

2 tbsp. olive oil

1 chopped onion

½ cup chopped red bell peppers

½ cup chopped green bell peppers

½ cup chopped eggplants

½ cup chopped zucchinis

½ cup crushed tomatoes

1-2 minced garlic cloves

Salt and pepper to taste

1 tbsp. dried oregano

1 tbsp. minced fresh basil


Instructions (ratatouille):

1. In a pan, heat olive oil and add vegetables beside tomatoes. Sauté for 5 minutes.

2. Add tomatoes and herbs. Cook on low heat for 30 minutes. Stir occasionally.
