Do you need a last-minute lunch or dinner? Try our protein bowl filed with healthy and nutritious ingredients! This recipe can easily be transformed into a vegetarian or vegan version. Simply replace the meat and mayonnaise with vegan substitutes.

Ingredients

¼ cup red beans

¼ cup chickpeas

¼ cup cooked ground beef

¼ cup microgreens

¼ cup cherry tomatoes

¼ cup cooked quinoa

 

Sauce:

2 tbsp. mayonnaise

1 tsp. Sriracha sauce

1 tsp. crushed red pepper

Salt and pepper

Steps

1. Add the cooked quinoa at the bottom of a bowl. Add the red beans, chickpeas, microgreens and cherry tomatoes in triangle shapes.

2. In a cup, combine all the ingredients for the sauce. Add the sauce on top of the bowl.
