Gnocchi with Mushrooms

Attention mushroom lovers: this hearty and creamy gnocchi with mushrooms recipe was made for you!

 

Ingredients:

350 g gnocchi

1 cup heavy cream (35%)

½ cup broth (chicken or vegetable)

1 cup Paris mushrooms

1 cup Portobello mushrooms

¼ cup onions minced

1 clove garlic

2 tbsp. fresh basil minced

3 tbsp. olive oil

Salt and pepper to taste

 

Instructions:

1. Cook the gnocchi according to the packaging instructions. Reserve.

2. In a pan, over medium-high heat, add 2 tbsp. olive oil, mushrooms, garlic and onions. Cook for 6 minutes. Add the gnocchi and the remaining olive oil. Cook for 2 minutes or until the gnocchi are golden.

3. In a saucepan, add cream and broth. Bring to a boil and then reduce the heat. Let simmer a couple of minutes to thicken the sauce. Season with salt and pepper.

4. Add the sauce to the gnocchi mix and mix to combine.

5. Divide the pasta in 2 bowls and top with fresh basil.
