The warm weather if officially back! It’s time to enjoy delicious no-bake recipes to cool down. Try our tomato, cucumber and pepper gazpacho.  

 

Ingredients (gazpacho):

2 Italian tomatoes diced

2 cups tomato juice

1 cucumber peeled and diced

1 red bell pepper diced

½ cup onion chopped

1 clove garlic chopped

1 tbsp. olive oil

1 tbsp. lime juice

Salt and pepper

 

Ingredients (topping):

Cucumber diced

Cherry tomatoes

Shallots

Olive oil

 

Instructions:

1. Add all the ingredients for the gazpacho in a blender. Mix until smooth.

2. Pour the gazpacho in 4 bowls and add topping.
