Clean Out the Fridge Pasta

This pasta recipe is a great solution to emptying your fridge after the Holiday season. If you are a cheese and charcuterie board fan, you’ll love this one. Our chefs came up with this Clean Out the Fridge Pasta recipe to avoid wasting your Christmas leftovers. Enjoy!



1 pack of your favourite pasta

1 cup kale and/or spinach

1 cup diced tomatoes

½ cup chopped pancetta and/or prosciutto

¼ cup chopped green and/or black olives

Half onion, diced

1 tbsp. olive oil

1 clove garlic, minced

Fresh ground pepper, to taste



½ cup tomatoes

¼ cup of your favourite cheese (feta, cheddar, mozzarella, bocconcini, etc.)

1 clove garlic

1 tbsp. olive oil

Fresh basil

Fresh ground pepper, to taste



1. Cook pasta according to package instructions. Meanwhile, heat olive oil in a pan over medium heat. Add onion and garlic. Cook for 3-5 minutes.

2. Add kale/spinach, tomatoes, olives and pancetta/prosciutto. Cook for 6-8 minutes. Season with pepper and reserve.

3. Add all the sauce ingredients in a blender and mix for a couple of seconds until you get a semi-smooth texture.

4. In the vegetable mix pan, add cooked pasta and sauce. Heat for a couple of minutes and serve immediately.
