Buttermilk Pancakes with Fresh Fruits

A good morning starts with fresh pancakes and delicious fruits. Give this buttermilk pancake recipe a try!

 

Ingredients:

¾ cup buttermilk

¾ cup 35% heavy cream

2 tbsp. melted coconut oil

3 eggs

1 tsp. vanilla extract

2 cups flour

2 tbsp. raw sugar

1 tbsp. baking powder

 

Instructions:

1. Combine dry ingredients in a bowl.

2. Beat the eggs and combine with dry ingredients. Add buttermilk, heavy cream, vanilla and mix well.

3. While whisking continually, slowly add melted coconut oil.

4. In a non-stick pan, add a scoop of the pancake mixture and cook 1:30 minute on each side.

5. Serve with maple syrup drizzle and fresh fruits.
