Blueberry & Lemon Bread

Our blueberry and lemon bread can be served at brunch or desert time. This recipe is very easy to prepare and so delicious. Enjoy!

 

Ingredients:

2 cups flour

2/4 cup sugar

1 ½ cup blueberries

¾ cup almond milk

½ cup non-salted butter

¼ cup lemon juice

2 eggs

1 tbsp. baking powder

1 tbsp. vanilla extract

Zest of a lemon

 

Instructions:

1. Preheat the oven to 350°F.

2. In a bowl, mix the flour with baking powder.

3. In a second bowl, cream the sugar and butter. Add the eggs, milk, lemon juice and vanilla.

4. Add gradually the dry ingredients and mix well to combine. Add the blueberries and lemon zest and mix.

5. Pour the mix in a buttered bread pan. Bake in the oven for 60 minutes.

6. Cut slides of the bread and serve with Greek yogurt and fresh blueberries.
