Beet Carpaccio with Goat Cheese

4-6 large cooked red beets

½ cup goat cheese

¼ cup almonds

½ cup green shoots

3 tbsp. olive oil

1 tbsp white balsamic vinegar

1 tsp. lemon juice

1 tbsp. Dijon mustard

1 tbsp. honey

Salt and pepper to taste



1. Prepare dressing by mixing white balsamic vinegar, honey, lemon juice, salt and pepper in a bowl. While whisking, drizzle in the olive oil. Reserve.

2. Using a mandolin or a knife, cut thin slices of beets and place them beautifully in a serving plate.

3. Add the green shoots, goat cheese, almonds and garnish with the dressing. Enjoy!
