Bacon & Kale Orecchiette

Ingredients:

1 box of orecchiette pasta

2 ½ cups kale, chopped

1 cup green peas

½ bacon, cooked and chopped

1 onion, diced

2 cloves garlic, minced

¼ cup heavy cream (35%)

¼ cup Parmesan cheese

3 tbsp. lemon juice

2 tbsp. olive oil

1 bunch fresh basil, chopped

Salt & pepper, to taste

 

Instructions:

1. Cook the pasta according to the packaging instructions. Set aside.

2. In a pan over medium heat, add 1 tbsp. olive oil, onions and garlic. Cook for 5 minutes. Add kale and cook 5-7 minutes.

3. Add the heavy cream, lemon juice and the rest of the olive oil.

4. Add the cooked pasta, bacon, green peas, Parmesan cheese and fresh basil. Mix well to combine. Season with salt and pepper and serve immediately.
