Carrot and Ginger Soup

Take advantage of the lockdown to cook delicious and comforting recipes like our creamy carrot and ginger soup. Garnish with crispy pancetta and serve with a good slice of artisan bread.

1 onion chopped

2 cloves garlic chopped

3 cups carrots diced

1 cup sweet potatoes diced

6 cups chicken or vegetable broth

2 tbsp. olive oil

¼ cup fresh ginger chopped

1 tbsp. nutmeg

Fresh thyme

Salt and pepper

Pancetta (optional: for topping)


1. In a large pan over medium heat, soften the onion and garlic in olive oil. Add the remaining ingredients and bring to a boil. Cook 25-30 minutes or until the vegetables are soft.

2. Remove the thyme sprigs and blend the soup with a food processor/blender. Season with salt and pepper if needed and garnish the soup with crispy pancetta.
