This easy and simple recipe is so refreshing! Here’s another delicious recipe to enjoy at a picnic. Our tomato and bocconcini salad topped with fresh basil taste just like summer.
20 cherry tomatoes (various colours) cut in halves
15-20 mini bocconcini
½ cup basil leaves
¼ cup red onions chopped
3 tbsp. balsamic vinegar
1 tbsp. red wine
1 ½ tbsp. olive oil
1 tbsp. honey
Salt and pepper
1. In a small casserole, simmer the balsamic vinegar, red wine and honey a couple of minutes until the mixture thickens. Remove from heat and set aside.
2. Cut the tomatoes and red onions and place on a serving plate. Add the basil leaves and bocconcini cheese.
3. Top with the balsamic reduction and season with salt and pepper.
