Our Nordic shrimp and fennel stuffed avocado recipe is fresh, healthy, quick and delicious! Serve it as a side dish, appetizer or light lunch.
1 cup Nordic shrimps cooked
1 fennel bulb
1 clove garlic minced
1 tbsp. olive oil
1 tsp. lemon juice
Salt and pepper
1. Cut the avocados in half and remove the pits.
2. Cut the fennel and shrimps. Mix all the ingredients in a bowl (beside the avocados). Season with salt and pepper.
3. Stuff the avocado halves with the stuffing and serve immediately.
