Leek and Potato Soup

Since the hot weather doesn’t seem in a rush to come back, warm up with our creamy leek and potato soup. Add a gourmet topping like bacon, microgreens and homemade croutons.

Ingredients

1 onion chopped

3 cloves garlic chopped

3 cups leek chopped

1 cup potatoes diced

1 cup microgreens

6 cups chicken or vegetable broth

2 tbsp. olive oil

1 tbsp. dried thyme

Salt and pepper

Bacon

Microgreens

Crackers or homemade croutons

Steps

1. In a large pan over medium heat, soften the onion and garlic in olive oil. Add the remaining ingredients and bring to a boil. Cook 25-30 minutes or until the vegetables are soft.

2. Blend the soup with a food processor/blender. Season with salt and pepper if needed and garnish with bacon, microgreens and crackers/homemade croutons.
